Notes: This bottling is composed of Pinot Nero and Chardonnay from vines planted in Cazzago San Martino. The vines are planted to a southwestern exposure on a slight slope 230 meters above sea level, upon beds of alluvial Morain soils with sandy structure. The fruit is hand-picked and harvest never goes past the end of August. The grapes are vinified in stainless steel tanks with maceration on punched-down skins for a few hours depending on the year. Tirage takes place during March and April, whereas foam formation and maturation on stacks can take from 24 to 36 months, depending on the year in the controlled temperature of the aging rooms. Disgorging involves adding a "Liqueur d'expedition" prepared with vintage wines, resulting in a Brut version with about 7 g/l of sugar. The final wine is released after three months of refining in the bottle.
